    Excellent trade-off between 100% native Thai and completely Americanized food Provides a wide selection of recipes, many unique to this book. Recognizes when ingredients are ok and when you really need the true Thai ingredient to preserve the integrity of the dish.

    Update: Ok, now that I've had a chance to make several dishes from this book, I'm going to say it's more of a 3.25-3.5 for me. Everything I said below still holds true, but I have made notes to adjust to lower the salt and bitter notes in most of the things I've made from this book. In this case, I've several recipes earmarked, but haven't made more than a couple of the simple ones. Should my results change my opinion either up or down, I'll re-evaluate my rating, but right now I'm going with 4 stars. This cookbook demystifies Thai cooking for me. The author found that sweet spot between insisting on rigid authenticity and compromising to adjust for American kitchens (and grocery store limitations.) She's clear when you can substitute one product for an easier-to-find one and when you should hold out for the real thing. There is a good section about ingredients -- in which I learned to stop shaking the can of coconut milk and the difference between Thai basil and holy basil. The recipe instructions are clear and concise. There is a good range of recipes, many of which include variations. Most of the recipes will be familiar to frequent restaurant patrons, which is the entire point. Recipes are grouped by type (appetizer, rice and noodles, soups and salads, curries, etc.). Each recipe give the English and Thai name, spice level, prep and cooking time, dietary notes (vegan, nut-free, etc.) before the ingredients and instructions, and any variations or tips are at the end of the recipe. At the end of the book are menu suggestions, conversion charts, and vendors suggestions. There is no index, probably because the TOC is so thorough that none is needed. This is not a photo-intensive book. There are maybe half a dozen photos. I'm fine with that. No doubt some armchair cooks will complain that every step isn't shown in full color Instagram-worthy glory, but I know what rice looks like and how to slice vegetables. I'm might have added points for the inclusion of photos for some of the more unusual dishes, but I'm not going to dock any points for not having them. The eb0ok version navigation worked well. I appreciate that every recipe is listed in the TOC with active hyperlinks to the recipe. The font is clear and legible, and increasing the font size maintains the formatting as well as can be expected. (Let's face it, books with a lot of tables are never going to perform flawlessly in ebooks except at the font size the graphics person had in mind when they laid it out.) I really only have one complaint (so far -- we'll see what happens as I cook more from it) and that's that there was supposed to be an "ingredient tip" about the type of tea to use for Thai tea. Given our summer addiction to this stuff, I really need to figure out the best tea to use so I can duplicate it rather than making our local Thai restaurant rich. Hot weather is coming!
